Baked Flat Mushroom with teriyaki vegetables.
4 Large Flat Mushrooms
1 Clove Garlic.
1 Lemon Grass
4 Baby Corn
½ Red Pepper.
½ Red Onion
2 Spring Onion.
2 Tablespoons olive oil.
1 Tablespoon soy Sauce.
15-20 ml Teriyaki Sauce.
¼ teaspoon of Ground Cumin, Paprika, Coriander, Cayenne and Cloves.
Heat the oven to 175 degrees Celsius.
Remove the stalk from the mushrooms and Peel.
Chop the vegetables and fry in the olive oil for 2-3 Minutes.
Add the ground spices and fry for a further 2 minutes.
Add the Soy and Teriyaki sauces enough to bind the vegetables.
Take off the heat and spoon the mixture into the mushrooms.
Bake for 7-8 minutes or until the mushroom is cooked.
Serve on a bed of dressed Leaves.
