Baked Mixed Mushrooms with Ciabatta. (serves 4)
1 clove garlic. crushed
2 teaspoons lemon juice
2 tablespoons olive oil
2 teaspoons balsamic vinegar
1lb mixed mushrooms, (chestnut, button etc.)
1 sprig fresh rosemary
1 ciabatta loaf
1 teaspoon of fresh chopped parsley and sage.
Heat the oven to 200 degrees C. Whisk together the Lemon Juice, garlic, olive oil, Vinegar and seasoning in a large bowl
Clean and slice the mushrooms and deseed the tomatoes and chop. Add both to the bowl of dressing, chop the rosemary then add it to the mushroom mix along with the chopped parsley and sage and mix together.
Place the mushroom mix into a roasting tin, cover with foil and cut 2 slits in the top to allow some of the steam to be released. And bake for 20 minutes.
When they are nearly done. Heat the ciabatta and slice in to quarters.
Place the bread cut side up on a warm plate and top with the mushroom mix.
