Minted Beef and Turnip Stew

It’s that time of the month again where Chef Simon Devereux comes in to give us more fabulous recipes. This time around, it was all about slow-cooker recipes. Here’s our first one. As Simon mentioned on air, if you don’t like to veg used in any of the recipes, you can always change if for something you do like!

Minted Beef and Turnip Stew

2 ½ pound chuck steak diced

2 onions sliced

4 small turnips cut into wedges

5 oz bacon diced

4fl oz red wine

1 tablespoon red wine vinegar

9 fl oz beef stock

1 large sprig of mint

Directions

  1. Trim the beef.

  2. Put all the ingredients in the slow cooker and cook on low for 4 to 5 hours until the beef is Tender
