A big thanks to our Simon Devereux for talking to us this month all about healthy eating. All of the recipes are being put on my Morning Show Blog individually, so we’ll start first with the Whipped Berry Porridge!
Whipped Berry Porridge (serves 2)
4½ oz berries. (raspberries, Blackberries etc)
1tablespoon caster sugar
1½ oz Instant porridge oats
9 fl oz semi skimmed milk
9 fl oz Water
2 tablespoons natural yoghurt (optional)
Pick over the berries and keep a few back for a garnish and puree the rest in the milk and water. Sieve the mixture into a saucepan.
Add the sugar to the pan and place it on a medium heat. Bring it to a rolling boil then gently whisk in the porridge. Then reduce the heat to its lowest point and simmer until it thickens
Pour into a bowl and garnish with the reserved fruit and the yoghurt.
